Flambeed giant prawn salad

French touch recipe to a salad. Perfect for a light dinner!

Serves 4

  • 16 raw king prawns
  • Vodka
  • Olive oil
  • Sunflower oil
  • Salt
  • 2 oranges
  • 1 grapefruit
  • Juice of one lemon
  • 1 teaspoon cornflour
  • Mixed green salad

Cut one orange and the grapefruit in pieces, then squeeze the second orange and collect the juice. Reduce the juice in a saucepan and thicken with the cornflour. Add two tablespoons of olive oil and one tablespoon of sunflower oil. Add the lemon juice. Season with salt and whisk to obtain a smooth dressing. Leave to rest in the fridge.

Peel the prawns. Prepare your plates with the mixed green salad, one segment of orange and one of grapefruit.

Heat your frying pan before start cooking. Pour one tablespoon of olive oil into your frying pan. Add th prawns. Lightly season with salt. Cook for two minutes each side. Add a shot of vodka and tilt the frying pan so that the flame sets the vodka alight.

Place the prawns on the mixed salad and drizzle with the dressing. For a twist add some avocado!
